Cooleeney Farmhouse Cheese


From the heart of Tipperary, where the pastures are rich and moist comes some of Ireland's finest cheeses. Here the fourth generation of the Maher family work their farm, and with the milk from their fresian dairy, they produce their farm cheeses. Their cheeses offer the complex world of international retailing and food service simple products, which appeal to today's consumer. You will discover that, in Cooleeney, there is an abundance of the essential ingredients for farm cheese especially creative crafts people with a true love of food.

COOLEENEY: The mini Cooleeney was the first cheese sold in the mid eighties by Jim and Breda Maher after a couple of years of experimentation of different cheese types. This cheese was choosen because hard cheese was the predominant one on the market in Ireland, and especially because the recipe was unique. Cooleeney is a white mould ripened soft cheese. The cheese is produced in two sizes, 200g or 1.7kg. It is made using vegetarian rennet, from raw or pasteurised milk. The flavour when ripe is robust, soft creamy to buttery in texture with a mushroomy tanginess unlike any other soft ripened cheese.


DUNBARRA: This cheese originated in Dublin where it was known as Dublin's only cheese. In the summer of 1999 it was moved to Cooleeney where it got more fresh air and created a new home for itself. Dunbarra is a soft white moulded cheese. It has a mild flavour with a firm buttery texture. It is made in two sizes, 180g and 1.7kg. It is made using vegetarian rennet from pasteurised milk. As well as being made in a natural flavour, it is also available with a pepper and garlic flavouring. They have a design of a Celtic motif on their surface.
