(St. Tola Organic Goat Cheese)
St Tola goats cheeses have been produced in the townland of Inagh, just south of the Burren in North West Clare for over 20 years. Meg and Derrick Gordon wanted to live in this beautiful clean environment and chose goats cheese as the way to procure a living from their 25 acre holding. Derrick who had been a tea plantation foreman in India had the creative ability to take on new pioneering work. Meg, who travelled and lived in Normandy, learned in the old French style,the art of farmhouse cheesemaking. Combining their creativity, St Tola Goat Cheese was born.
St Tola derives its name from a local saint and follows the French tradition of naming their cheeses after their saints. The unique flavours of St Tola Goat Cheese owe much to the clean environment in which they are produced; flavours that are suggestive of the sea and with undertones of peat.
In 1999 Siobhán began to learn the tradition of making St Tola from Meg. During this time new state of the art cheese rooms and good housing in accordance with EU regulations were built on Siobháns family farm near Gordons. St Tola has been made in these premises since 2000.
Siobhán has developed production capacity and new cheeses have been added to the St Tola range while still retaining the original true St Tola flavour.

St Tola Log This is the original St. Tola product and is the most well known of the St Tola Goats Cheese range. It is a gourmet soft goat cheese which is noted for its light smooth fine grained texture. The taste is creamy and sweet but with any number of sub-flavours. The flavour develops as the cheese matures and the texture becomes more compact. A natural rind develops with ageing. Depending on one's requirement, it can be eaten fresh through to maturity. St Tola Crottin These are fresh buttons of goat cheese which just melt in your mouth. The texture is very smooth and the taste is of the varied flavours of rich sweet organic milk. As it matures, the flavours become more pronounced and the textures more firm. A natural rind develops with ageing. St Tola Hard Cheese This is a hard cheddar type goat cheese, with a marbled pale complexion and exceptionally fine, smooth texture. The taste is sweet and nutty with a gentle tang which becomes more pronounced as it matures. Special Dietary InformationSt Tola Goats Milk products are easily digested and are highly suitable from a health point of view. The smaller fat globules in goats milk are easy to digest particularly for the very young, the very old or those with cows milk product alergies. Goats milk products have been used to relieve asthma, eczema and migranes.
AWARDS
2009 was a bumper year for St Tola Organic Goats Cheese in County Clare.
Siobhan Ni Ghairbhith’s Organic Cheese won a slew of awards including a prize at the Premio Roma Awards in Rome, medals at the Great Taste Awards and British Cheese Awards and the Best Export Product award at The National Organic Awards.To finish in September (pictured above) St Tola won Supreme Overall Champion at SHOP.
In 2010, St Tola won ‘Best Producer’ at the Restaurant Association of Ireland Awards and also won a Gold 2 Star Award at the Great Taste Awards 2010 for our Hard Cheese.

St. Tola were delighted to receive the Bord Bia Award for ‘Best Organic Retail Product’ at the National Organic Awards in September.Earlier this year, St Tola won ‘Best Producer’ at the Restaurant Association of Ireland Awards and also won a Gold 2 Star Award at the Great Taste Awards 2010 for their Hard Cheese.
