“Sara McSweeney has been appointed as Artisan Food Technologist to the Dairy Sector. This appointment has been made by Teagasc for two years and is jointly funded by the Departments of Agriculture, Food & Fisheries (DAFF) and Community, Rural and Gaeltacht Affairs (DCRGA) and will be based at Moorepark Food Research Centre, Fermoy, Co. Cork. A second appointment, under the same scheme, addressing the needs of the non-dairy food artisanal sector is based at Ashtown Food Research Centre. Sara’s brief is to work with artisan and speciality food producers to provide training, advice and technical support. This will be achieved by individual interaction with artisan producers along with training courses and workshops on relevant subject matter. In particular, Sara will aim to help her clients with the interpretation of relevant food legislation and also with technological information necessary to develop their businesses further. Where follow-on specific technical expertise needs to be acquired or laboratory analysis completed, a charge may be applied for the service.
