Durrus Farmhouse Cheese

 


The Durrus Meltdown

Durrus has excellent melting qualities, it makes wonderful RACLETTE, and grilled sliced Durrus on toast is really good.

Recipe for a lovely melted cheese and potatoe dish. This recipe serves four.

* 900 grams of waxey potatoes
* 1 small Durrus or 400 grams of cut portion
* 2 onions
* 200 grams back bacon rashers
* 250 gram tub of creme fraiche
* black pepper and salt.

Cube the potatoes and steam or parboil until just soft.

Remove rind from the Durrus cheese and cit into cubes. Cut rashers into small pieces, cook gently.

Simmer the finely cut onions in a covered pan. Put all the ingredients in a butteres shallow oven dish and add salt and pepper to taste.

Pour on the creme fraiche and mix gently.

Bake at 180 oC for 15 - 20 minutes, stir gently.

Remove from oven and after 10 minutes serve with a green salad and red wine.
