Lavistown
Cheesy Leek Pie
Wash 4 medium sized leeks and slice finely. Fry in a little olive oil until quite soft. Sprinkle on 1 heaped tablespoon of flour. Stir well. Add enough milk to make a sauce consistency. Stir in 250g diced Lavistown Cheese and heat until cheese has melted, Pour over sliced boiled potatoes in a flat oven-proof dish. Bake until bubbling and golden.
Red Cabbage with Lavistown Sausages
Grill the sausages well and allow to cool. Finely slice 1/4 of a large red cabbage. Put cabbage on to simmer with 6 tablespoons of cider vinegar, 3 tablespoons soft brown sugar and 2 tablespoons carraway seeds. Chop in 2 cooking apples. Simmer for 30 - 40 minutes, adding water if it becomes too dry. The cabbage should be really soft and the apples completely dispersed. Chop the sausages into 2cm lengths and stir into the cabbage. Serve with baked or boiled potatoes.
