Milleens Cheese


Milleens with Pasta

200 - 250 grams (half-a-pound) Milleens grated
Cream
Sage
Tagliatelli

In a saucepan warm some cream, a half-pint say, in which you have placed a handful of fresh sage leaves. Allow to sit on a warm range until the cream has absorbed the flavor of the sage and then strain. Add the Milleens and stir until the cheese has disappeared.

Cook the tagliatelli until al dente.

Pour the creamy sauce over the tagliatelli, mix and serve.

This dish stands alone, but can be rendered more substantial by the addition of say some ham which has been cut into strips of the same width as the pasta, or alternatively, some cooked white fish, or smoked fish, or chopped cooked spinach, or, when in season, some lightly cooked Italian Fennel.

Mashed Potatoes with Milleens Chunks

Self-explanatory. The cubes of cheese should not be mashed but folded into the potatoes. Spring Onions in generous proportion, cream, butter, pepper and salt all add their savour to this dish which is a lovely accompaniment to crisply grilled bacon or lamb cutlets or liver.

Ingredients:

Choux Pastry

Fold diced ¼ inch little cubes of Milleens into choux pastry. Spoon or pipe onto a baking dish. Bake. Serve hot . Can also be prepared in advance and served cold as a canapé with a crisp, white wine.
